Importance The article deals with the problems of the baking industry of the Republic of Dagestan.
     Objectives The article aims to troubleshoot serious problems of the baking industry of the Republic of Dagestan and develop certain measures for the diversification of bread production.
     Methods For examination of various aspects of the region’s baking industry, we used econometric research techniques.
     Results We identified the key problem of the baking industry in the region, i.e. an extensive network of private bakeries that make up the primary competition to large bread-making plants. Also we identified problems of reproduction of fixed assets at baking enterprises. We offer certain activities for the diversification of production through the production and sale of ready-made bakery premix with various functional additives.
     Conclusions and Relevance We conclude that to raise the economic efficiency factor of the processes of reproduction of fixed assets of bakeries and extend the line of health products at competitive prices is impossible without the diversification of production.
