Growth of company’s competitiveness and profitability requires adopting new methods of corporate management. When quantity and complexity of catering goods’ range increase the demand on quality and accuracy of pricing rises too. This problem can be solved by using analysis of marginal level of costs and effective methods of costing and demand study. The article reflects the author’s vision of management of catering goods’ consumer characteristics based on analysis of marginal level of costs of production and selling.
